Vegetable Bin Soup with Buttered Toast

We usually end up eating this dish at the end (or beginning) of the week, in an attempt to clear the vegetable bin of any sad-looking or forgotten produce. Tonight’s bounty yielded: onion, garlic, sweet potato, fingerling potato, red bell pepper, carrot, crimini mushrooms, thyme and parsley. To which I added: a can of crushed tomatoes, lentils, kidney beans, spices and a quart of good vegetable stock.

In our house a hot bowl of soup is almost always accompanied by a slice of buttered toast. Tonight’s we used Dave’s Spelt.

    Yummmmmm!!! Can I come over to your house? As of last night my end-of-the-month refrigerator shelves only yielded curdled milk, brown lettuce and wrinkled up grape tomatoes.
