The pantry looked meek. The vegetable bin was empty. The only thing I had hanging out in there was a bunch of parsley and a bag of carrots. Good thing this  soup requires very few ingredients. Try, in this order: olive oil, onion, carrot, rosemary, sage, white beans, vegetable stock, garlic, cooked quinoa, salt and lots of freshly cracked pepper.  This soup was inspired by the queen of healthy recipes, Ms. Heidi Swanson.

served with toasted Fleur de Lis Bakery ciabatta drizzled with olive oil
