Spotted @: Fleur de Lis Bakery

These hands belong to our friend Greg Mistell, and these little beauties are his danishes.

Greg is the best baker I know. He owns and operates Fleur de Lis Bakery in NE Portland. We first met Greg in 2007 when we were preparing to open our doors to Little Red Bike Cafe. E. Dohrmann and I were on the hunt for the perfect ciabatta roll for our fried egg sandwiches when we came across Greg’s baked goods. It was love at first bite. Over time I’ve become addicted to his almond rings, cinnamon rolls and bran muffins. E. has been known to finish an entire loaf of the tomato-basil foccacia before we even walk out of the door of the bakery. We also highly recommend the tuna sandwich from his newly opened cafe. Last time we ordered one it came with a perfectly ripe apricot–which they had on hand for making the jelly in the fruit croissants.

I am so grateful for the friendship we have with this man, especially considering it’s one that almost didn’t happen. When we first called the bakery to inquire about setting up a wholesale account we were informed they didn’t do wholesale.¬† When we met with Greg in person he expressed he was busy enough as it was meeting the demands of his bakery and various farmers markets. We politely said we understood and left the bakery…admittedly heartbroken. After a sleepless night, we returned the next day asking him to reconsider. We pleaded, explaining the lack of quality dining options in our neighborhood and the fact that we couldn’t imagine serving an inferior product knowing a better alternative was out there. Greg then explained he didn’t have the resources to deliver to us so E. offered to pick up our order at the bakery every morning at 6:00 am. When Greg realized he wasn’t getting away from these pesky kids he caved, and we’ve been doing business together ever since.

These days, Greg’s wholesale business is booming. You can find his goods in several Portland’s finest restaurants, coffee shops and cafes. E. Dohrmann and I blush every time Greg gives us credit for this phenomenon, telling us we were the “push” he needed in order to expand his business out the door (emphasis on push). Even though Fleur de Lis no longer requires us to come and pick up our bread we still do on occasion. We like having the ability to sneak into the back to catch up with our friend and watch the master at work.

Dessert: Pix Patisserie

This is my sweet tooth’s current obsession. I’m normally not a chocolate fan (give me cheesecake any day) which is why the discovery of this dessert from one of Portland most notable French bakeries, Pix Patisserie, surprised me. My favorite part is the delicate melt-in-your-mouth texture of the sticks of meringue. Highly recommended.
